Gianluigi Gerosa, an accomplished culinary professional, embarked on his distinguished career in the global hospitality industry over three decades ago. His journey began in his family’s restaurant in Como, Italy, where his deep-rooted passion for food was ignited.

This early experience led him to successfully own and operate two restaurants in Lugano Switzerland, laying the foundation for his illustrious career.

Gianluigi’s expertise and leadership have been integral to some of the world’s iconic hotels. He served as the Executive Chef at the Burj Al Arab, Emirates Towers, and Jumeirah Beach Hotel in Dubai, where he honed his skills in luxury hotel dining. His career further expanded as he took on the roles of Executive Chef and Culinary Director at prestigious properties such as Shangri-La Singapore and MGM Macau. His tenure at MGM Macau saw him overseeing the culinary operations for the casino and non-casino establishments, setting up a robust refurbishment program, and leading the pre[1] opening efforts for MGM Cotai. Most recently he worked from 2015 to 2025 as VP culinary development and Global Culinary director for Kerzner International for all brands worldwide including Atlantis, One&Only, Siro and Rare Finds brands

He is also the brainchild behind Gastronomy in Atlantis The Royal, The Noodles House brand established in 2002, and currently consulting as a partner for Andaliman restaurant with Kerzner International.

In Hong Kong and China, Gianluigi was the Corporate Culinary Director for the Miramar Group, where he managed around 20
free[1] standing restaurants, earning several Michelin stars and Bib Gourmand awards. His leadership was pivotal in positioning the Mira Hotel as a gourmet destination, significantly boosting its profitability.

Since joining Kerzner International in 2015, Gianluigi has been instrumental in the culinary development and operations of One&Only and Atlantis hotels worldwide. His contributions include overseeing the successful openings of Atlantis The Royal, One Za’abeel, and Atlantis Sanya in China and the refurbishment of One&Only Le Saint Géran in Mauritius. Mutia Gerosa, better known as ‘Mutia’ is the Culinary Consultant for One Za’abeel’s Indonesian concept, Andaliman, bringing with her a deep expertise in Indonesian cuisine rooted in her Central Javanese heritage. Born in Jakarta, Mutia’s early life was shaped by her father’s military career, which exposed her to diverse culinary traditions and learning from various regions across the archipelago. Her mother, from Kutoarjo, and her father, from Purworejo, instilled in her a rich appreciation for local flavours and encouraged her to be exposed to what regional gastronomy offers.
The family’s entrepreneurial ventures in North Jakarta, including several warungs (street restaurants), allowed Mutia to develop a profound knowledge of Indonesian spices, including the Andaliman pepper, which inspired the name of her consulting restaurant. From a young age, Mutia was involved in creating bumbu, the essential spice mixtures of Indonesian cuisine, a responsibility she shared with her mother and two sisters. She balanced managing a warung with her studies and later explored the batik export business.
Her passion for food led her to meet her husband, Gianluigi, at a friend’s wedding. Mutia passed her culinary skills to her family and established a respected private catering business. Today, as a Culinary Consultant for Andaliman, Mutia continues to infuse the restaurant’s offerings with her extensive knowledge of Indonesian flavours and traditions, reflecting her lifelong dedication to the cuisine.
