Gianluigi Gerosa, an accomplished culinary professional, embarked on his distinguished career in the global hospitality industry over three decades ago. His journey began in his family’s restaurant in Como, Italy, where his deep-rooted passion for food was ignited.
This early experience led him to successfully own and operate two restaurants in Lugano Switzerland, laying the foundation for his illustrious career.
Gianluigi’s expertise and leadership have been integral to some of the world’s iconic hotels. He served as the Executive Chef at the Burj Al Arab, Emirates Towers, and Jumeirah Beach Hotel in Dubai, where he honed his skills in luxury hotel dining. His career further expanded as he took on the roles of Executive Chef and Culinary Director at prestigious properties such as Shangri-La Singapore and MGM Macau. His tenure at MGM Macau saw him overseeing the culinary operations for the casino and non-casino establishments, setting up a robust refurbishment program, and leading the pre[1] opening efforts for MGM Cotai. Most recently he worked from 2015 to 2025 as VP culinary development and Global Culinary director for Kerzner International for all brands worldwide including Atlantis, One&Only, Siro and Rare Finds brands
He is also the brainchild behind Gastronomy in Atlantis The Royal, The Noodles House brand established in 2002, and currently consulting as a partner for Andaliman restaurant with Kerzner International.
In Hong Kong and China, Gianluigi was the Corporate Culinary Director for the Miramar Group, where he managed around 20
free[1] standing restaurants, earning several Michelin stars and Bib Gourmand awards. His leadership was pivotal in positioning the Mira Hotel as a gourmet destination, significantly boosting its profitability.
Since joining Kerzner International in 2015, Gianluigi has been instrumental in the culinary development and operations of One&Only and Atlantis hotels worldwide. His contributions include overseeing the successful openings of Atlantis The Royal, One Za’abeel, and Atlantis Sanya in China and the refurbishment of One&Only Le Saint Géran in Mauritius.
